Hotel Congress

I wrote a long and wonderful post on this place and our stay there, but my computer decided not to save it, so I am pissed. I will say that we had a wonderful time at Hotel Congress and the employees were the best. We stayed in room 220, which is a haunted room with a spirit named Vincent who seems to still be there. We didn't have much activity, but we think he answered our question during the seance. The food was amazing and cooked from scratch every morning. They have bars downstairs in the lobby, which is great because they don't want you to bring your own liquor to your room. You can however bring your drinks from the bar to your room. The rooms do not have TVs, but there is a nearby lounge with a comfortable couch and TV. You park in the garage next door, which is a short walk. The hotel is located in downtown Tucson and near lots of activities, stores, bars, and restaurants.  To read more on the history of this hotel and other information, check out their website:   Hot...

Sedona 2021: Restaurants

  As I mentioned in my previous post, the  El Rincon Restaurante Mexicano in  Tlaquepaque ( Tlaquepaque & El Rincon 2021 (echoesofthesouthwest.com ) is one of our favorite places to eat while in Sedona. When Sharon and I just recently vacationed in Sedona, we checked out other places to eat as well and were happy with the food. Here are some of the places we found:  For breakfast, we hit two really amazing places. The food was delicious and satisfying.  The Coffee Pot Restaurant:   Sedona has many places to dine and some more quirky than others. The Coffee Pot Restaurant is located near the Coffee Pot Rock. It has been in business since the 1950’s and offer around 101 different omelets for your enjoyment. They provide breakfast all day long and serve it with the best tasting coffee. Ghost Ranch Modern Southwest Cuisine

I love it when Sharon and I can find different places to dine at. Her son told her about the Ghost Ranch Modern Southwest Cuisine restaurant in Tempe, AZ. His wife and he love the food and is one of their favorite places to eat lunch or dinner. Well, they were right. The food and atmosphere was amazing. I had their chicken enchiladas and they were to die for. My favorite so far. The side dish of rice and beans completed the meal perfectly. I would totally suggest for everyone to give this place a try. You won't be disappointed.

Watermelon Margarita

Ingredient: Tequila, watermelon, limes and for the rim, we used Pop Rocks. slice watermelon and limes puree watermelon Add Tequila to watermelon puree. Heat up sugar and watermelon to make a sweet syrup for the mix. Add watermelon syrup to the mix, strain and pour into bowl. Rub lime on the rim of the glass and dip into Pop Rocks. We used tropical punch. Enjoy!
